Milk jam - This is the most popular and tradicional of all preserve in Argentina. It will found as filling in a majority of all pastries, cakes, sweets and other confectionary products.
Ingredients: Every liter full-cream milk, 300 grams sugar, a vainilla bean to taste, 1/4 teaspoon bicarbonate of soda. A tablespoon of honey: the secret.
Preparation: Boil whole milk and sugar with the vainilla bean and the pitch of bicarbonate of soda, over a rather quick fire until milk takes a little color. Continue over a minimum fire, barely simmering, stirring frequently to avoid sticking to the bottom and possibly scorchimg, until thick. Remove from the heat, add a tablespoon of honey and stirring. Save in jars: it keeps for months. No cornstach or potato starch I suggest.
I hope you enjoyed!

Carlos Keen

Pictures by Marina Capano

Carlos Keen, a small, magical town, stopped in time somewhere in the 19th century. The town increases its territory, always just a bit, with spectacular views of the esplanade that surrounds the old train station, in front of the parish. It would all be still more silent if it were not for the noises made by the silverware which devour the delicacies placed all around the table...
Today, Carlos Keen is full of restaurants and tea houses. You can truly be in peace and solitude amongst empanadas, picadas, homemade bread and moist pastas, all next to the heat of the fires which burn in the homes. Carlos Keen has begun to thrive on these curious visitors, which more than anything find an authentic gaucho town on the weekends. To get to this town, removed from this world, go on Acceso Oeste until Lujan and then on route 15 for a few kilometers, following the signs.A plaza larger than the town itself, a train station lost in time, and a parish made entirely from mud brick, make this the backdrop of what will be a pleasant and unforgettable day in the country.
